Paleo Pumpkin Pancakes

It’s October 1st and I just finished the Whole30 challenge so I decided to treat myself to some paleo pumpkin pancakes 🙂 I adapted the recipe below from a few different recipes I found on Pinterest. I topped my pancakes with some organic honey and banana…DELISH!

Pumpkin Paleo Pancakes (Serves 2) 
Ingredients: 
3/4 Cup Egg Whites 
1/2 Cup Pumpkin
1/2 Cup Almond Flour
2 TBSP Coconut Flour
2 TBSP Vanilla Protein Powder 
1/2 TBSP Cinnamon
1/4 TBSP Nutmeg
1/4 TBSP Allspice
1/4 TBSP Baking Soda
2 TBSP Honey
1/2 TSP Vanilla Extra

Directions:

Mix all the dry ingredients together in a bowl. Gradually add in the egg whites, pumpkin, vanilla and honey and mix until smooth. Spray a warm skillet with coconut oil and cook 3-4 inch pancakes for about 3 minutes on each side or until cooked through. Add desired toppings and enjoy!
